3 Ways to Use Microgreens That Rock

I absolutely love microgreens!  It's that time of year!  We are headed into Memorial Day weekend, farmers markets are starting to get into full swing, and we will be craving lighter fresher foods.  For years we would harvest our own from garden thinning, but more recently we get them from our local garden store Milaegers, who has a forward thinking owner that started her own microgreen revolution several years ago and began planting them to sell.  

So, what are microgreens?  They are baby plants only 1-3 inches tall that have a sweet concentrated flavor and are high in antioxidants.  They can be almost anything, but some of the best are sprouts coming from baby beets, broccoli, radish, kale, sunflower, garden cress and arugula to name a few.  How do I use these babies??  I'll give you three of my favorite ways to get you started.

1) Toss them in your Salad that Doesn't Suck!

2) I love to throw them on top of a pasta dish, like my Lemon Pasta, they add a freshness that is amazing and so healthy.

3) I toss a whole half pint of them into my daily smoothie.  A perfect addition and the natural sweetness compliments the smoothie.  Stay tuned, I'll be writing more on that soon!
